I've been seeing more and more single-serve food ideas for weddings — does this mean shared/feasting style is on the way out? Or was that just a response during covid? Does single-serve catering cost more? Thanks.

Is not dead personally I don't like grazing tables, lots of wastage plus weddings are in summer ... not great to have things outdoor, flies and Western Australia heat not a great combo.

No, we from HLB Catering, have been doing quite a few of shared meals. We're all different with different ideas and point of views. Feasting is a very nice way to eat while having fun.
We serve shared platters and grazing tables a lot! I'm sure your guests will enjoy their time.
If you like the idea, go ahead! it's your big day, do it the way you've always dreamed of.
Catering styles are very personal. Nothing is necessarilly in/out of vogue with respect to shared platters or single servings. Shared platters do require significantly wider guest tables as they do take up space and make for reaching difficulties by the guests. It may look lavish, but serving can become quite difficult.
