We would suggest having a grazing table as well as at least 8-12 canapes per person for a cocktail wedding served over 2-4 hours.
The timeline i would suggest if your reception started at say 4.30pm, for example, would be:
4.30pm reception starts and guests settle in and grab a drink
5.00pm-6.30pm grazing table is made available & first lot of canapes start (4-6 per person)
6.30pm-7.00pm bridal party return from photos and first lot of speeches are made
7.00pm- 7.45pm chance for couple to catch up with guests & second lot of canapes served (3-5 per person)
7.45pm-8.30pm cut cake, final canapes (1-2 per person) while second lot of speeches are happening, bridal dance
8.30pm onwards dancing & dessert/wedding cake served.
So you would have 1.5 hours of canapes, then 30 minutes no food served, then 1.5 hours canapes which will have slowed down by the time the second lot of speeches start, then dessert can be served around 8.45pm. You have the grazing table available throughout the evening (most should be consumed within 2-3 hours) and wrap up wedding around 10.30-11.00pm.
If you're planning of continuing the party past that time it wouldn't hurt to have some dips and cheeses made available later in the evening which you can get family or friends to prepare prior to the event (or get the caterer to prepare and leave in the fridge) and have someone place them on tables.
Another option would be to have just the grazing table for the first hour at 4.30pm and then 1 hour of savouries from 5.30pm-6.30pm and then another lot of savouries from 7.00pm-8.00pm. Then dessert served around 8.30-8.45.
Just depends on your budget and how much food you want to serve to your guests. Most caterers should be able to give you serving times and quantities based on their menu.
We recommend 8-12. This will depend on whether you have any that are a substantial serving (mini meal) or they all just petite!
We suggest 6-7 canapes to ensure your guests are provided with an adequate amount of food.
3 hot with 2 cold, with 3 mini bowl (larger then canape but smaller then entre) later in the night then finish with Wedding cake.

We would recomend 6-8 canapes, 1 x mini dish, 2 x substantial items and couple of dessert canapes or your wedding cake.
If your budget allows for it, add a little something to come out later in the night-sliders or our crinkle cut chips are a favourite!

We also do not provide any deep fried options (which generally make your guests more thirsty and lathargic).
