As a caterer for more than 20 years, and 3 times winner of a NSW tourism award for catering excellence, Wayne has what you are looking for! One of Wayne’s specialties is "the theatre of food" whereby the final preparation and cooking process is presented in view of guests. eg. a tapas event could include spectacular charcoal braziers cooking a variety of international delicacies, spit roasts, food stations including oyster shucking, sushi & sashimi bar, paella cooking … just to mention a few!

Do caterers let you taste their food before you book them?
Just wondering if it's standard to taste test a caterers cooking before you hire them. The food is SO important for my wedding and while the people I've been looking at LOOK good, how can I know they TASTE good too?

Yes most definitely food tastings are available. The price can be complimentary or a cost only charge depending on the guests numbers at the tasting and subject to the intended guests numbers at the wedding!
How many drinks do each person drink in cocktail hour?

I usually allow half a bottle of wine pp and 2 beers pp overall ... eg. 100 guests (50 bottles of wine and 200 beers) would be sufficient for a 4 hour service
If you are having cocktails initially (for approximately 1 hour), I would allow 1 cocktail pp overall before guests will move over 2 beer and wine options
