We are purveyors of fine wood-fire smoke-roasted meats.
We do real wood-fired barbecue! We host and collaborate on pop-ups, events, functions, festivals, or wherever else delicious low-and-slow barbecue is required!
We can either bring our market style setup, comprising of an equipped 3m x 3m marquee tent and our Texas offset smoker, “Charlotte”, to your function or event, OR we can cater your function from our commercial kitchen facilities, located in Melbourne’s inner-west.
Our foods and menu are built around meticulously slow smoked and/or grilled meats: artisanal barbecue, if you like. We aim to provide the very best experience a carnivore can have.
Along with our fine meats, we serve exciting salads and homemade barbecue sauces, which compliment the meats. Nothing heavy, and we don’t use Mayo much.
These vibrant meals are served on fun, market style platters of various sizes.
Our aim is to avoid white acrid smoke, as it will taint the meats. The “Smoke” we produce is mostly invisible or “blue smoke”, which only makes a shimmer against the sky. But, people love the smell of a clean burning wood fire. We’ve never had anyone complain. Not even our neighbours.
We can also provide other serving staff, such as a barman, or whatever else you might need. We have friends in the industry and can get our hands on many things, such as craft beers and DJ’s.
We also cater more traditional charcoal grilled events, or a mix of both.
