1: 3/4 types of beer 2. One type of cider 3. Red wine 4. White wine 5. Moscato 6. Tequila 7. Soft drinks (coke, coke zero, lemonade, OJ) 8. Still and Sparking water 9. Champagne Is this enough?
Is it rude to ask guests to pay for their meal?
I personally find it rude, but a wedding I am invited to has done this

There's plenty of options there - try simplifying a little if you are catering for a large group ie. 2 beers, 1 cider, 1 red, 1 white, 1 sparkling white and soft drinks (including water).
If you did want to offer spirits then again, keeping it basic would be ideal ie. whiskey, vodka, gin... I'd only recommending keeping the tequila if it's a personal preference and you have a specific reason to have it there otherwise you'll encourage people to do shots and it could get a little out of control =)
