My name is Fiona and I am the owner and designer at Dragonfly Cakes, located in the stunning Hunter Valley in New South Wales. I’m a local girl, born and raised in Newcastle in a family where we love to cook and entertain, add to that a childhood of amazing birthday cakes made by my mum, it only seems natural that Dragonfly Cakes was eventually born. We have been operating now for 10 years now, specialising in wedding cakes for the last 8 years and opened our shop in Weston in 2020.

FAQ
As there is a limit to how many orders we can complete each week I recommend getting in contact with us 6-12 months in advance for a wedding cake, especially if you are getting married in one of the more popular months (March & April and September - November).
For all other orders, 2-4 weeks notice is generally fine depending on the time of year.
We offer a flexible approach to designing your cake - we can do it all online via email or video apps or we can book an onsite consultation.
To start the process via email, go to the contact form on our website.
At a minimum we need to know the date & time of your event, the location, guest numbers (approximate is fine) and whether you are wishing to serve the cake as dessert or with coffee.
In addition to this information its helpful to send through or bring examples to the consultation of any themes you have chosen for your ceremony and reception.
If you've already chosen your wedding dress or suit then a photograph or sample of the material showing lace or beading details is very helpful if you wish to incorporate that into the cake design.
Additionally any ideas you have on colours, invitations, table decorations, bridesmaid dresses, key pieces of jewellery and floral arrangements are also important to think about.

Tasting Boxes are available once a month and can be booked via email or this website
They cost $45 (pick up at our shop) or $60 (express post) and contain 8 types of cake layered with delicious filling.
For weddings, a Tasting Box is included in all cake bookings over $400 (pick up only) - but can be posted for an additional $15 +GST.
Each month we announce when the Tasting Boxes are going out in our email newsletter and our social media pages.
We will also open up a set number of Tasting Boxes which you can order if you just really love cake (no judgement here!)

We're having a small wedding of 30 people, but I love the look of a four-tiered cake. What are our options?
Do cake makers provide toppers or do we source them ourselves?
If not, where is the best place to buy? (Can we hire any?)

it does depend on the cake decorator but I have a couple of suppliers for acrylic topppers and also for modeled ornament styles - so depending on what my couples would like I can either arrange it for them or pass on my suppliers details. I am also fine with my couples ordering their own toppers and I just ask them to let me know before hand cause I can offer suggestions on the size of the topper and sometimes we need to know ahead of time cause ornamental toppers can be quite heavy so we may need to add structure to the cake to support it or even design the floral arrangement around the topper itself.
Etsy and Ebay are still a major source of toppers for weddings, searching on instagram will also give good results as most business that make toppers happily ship them across the country. I've also purchased toppers for couples via Etsy and had them shipped from the UK and the USA as there was nowhere local that made the specific type of topper they wanted.

Definitely - this is where the use of dummy tiers really comes into its own.
Dummy or styrofoam cake tiers allow us to create huge cakes without the excess cake and it also allows us to appear to defy gravity and use unusual shapes as well - so in situations where real cake would be a massive challenge or even impossible.
It does depend on your style of cake though, if you are having exposed tiers (like a naked or semi naked cake design where the design is reliant on you seeing the cake layers through the outer coating on the tier) then you need to use cake but if your tiers are fully covered (buttercream, ganache, fondant, chocolate etc) then a dummy or styrofoam cake tier would work really well.
If your heart is set on a semi naked or naked cake then maybe you could mix some tiers up design wise - so have a couple in that style and then have 1-2 in a covered style and make them the dummy tiers.
