Firstly, congratulations on your engagement. My name is Nicole and I love being a Marriage Celebrant. I love weddings, I love celebrating and I love meeting new people. I am fun, outgoing and professional. I am a wife and mumma to two babes. I love the ocean and love to enjoy a wine. would i have to pay for their flights accommodation food etc

It would depend on each individual celebrant. I would say most would be happy to fly to a destination wedding and most would require their costs to be paid. Some would get you to book their flights etc and others would just charge you a fee to cover all of their expenses. What you need to ensure is you and the celebrant are both clear on what is included in their fee - does their fee cover all the travel associated costs or are they going to charge you extra on top of the quoted fee.
I'm looking into booking a celebrant, but I don't understand the difference between ceremony types?
Some provide a "full personalised" ceremony, and others a basic package, what's the biggest difference there? I thought all ceremonies had to be pretty much the same, ie: "Do you ___ take ___ to be your lawfully wedded wife". Please explain how there's such a big difference in price and services? :)

all wedding ceremonies must include some certain legal parts but apart from those parts the rest of the ceremony can be tailored to suit you and your fiancé
Some celebrants may advertise a basic price for a straight forward ceremony including the mandatory legalities and not much more and a personalised ceremony would be where they work with you to create a ceremony that celebrates you both and with options including sharing your history together helping you choose poems or readings some people include rituals like sand ceremony or lighting candles. Best advice is to decide what you want your ceremony to be like and go from there. Meet with celebrants and make sure you click with them before you book!

How do we make it known to our guests?

Get your celebrant to announce it before your ceremony starts. Lots of couples choose to have an unplugged ceremony and ask their guests to not take any pictures during the ceremony. It's almost wedding etiquette now to not post a pic of the bride and groom until they have.
